I use Japanese eggplant. The skin is more tender and it cooks at the same speed as the peppers and onions. I also like balsamic vinegar with this. I you can find pomegranite balsamic, it's delicious with this!

This was a delicious dish. I did not use the grill but used broiler. The flavors complemented each other and the capers, red wine vinegar, and red pepper flakes gave it zing!

Just saying, making this on 2-burner cast iron grill pan indoors was quite a chore but grilled veggies are good.

This is the perfect grilled salad: simple and delicious. I used globe eggplant which grilled really well, and sprinkled some za'atar over it all as well, then mixed in some Italian parsley at the end. This is going to be a go to summer salad for me.

We loved it. I happened to have a mild Anaheim pepper in the fridge and I like that better than bell pepper. But used also red bell pepper. Grilled red onion. I also had some halloumi and grilled that. Worked perfect. Simple but tasty

Wow, this was fantastic! I used balsamic vinegar since I didn't have wine vinegar. I didn't have capers, so I chopped up some green olives. I also added a few pinches of za'atar as another post suggested. I could have used a little less oil, since I brushed quite a bit on the veggies while they were grilling. I used my nearly new cast iron grill pan and it worked great. I will definitely make this again.

Great make ahead side dish. I made it with Japanese eggplant cut lengthwise to grill and used sherry vinegar. Served with grilled swordfish and arugula salad.

A lot of wow for little work. Fantastic as a bed for fish or chicken. Colorful, flavorful, wonderfu. I wouldn't change anything. Similar to ratatouille but easier and frankly, better.
Condiment queen
If you're feeling edgy, add a little feta and a little mint. Be sure to hunt down a fresh loaf of ciabatta to serve with it.

I put the cut vegetables directly on the grill, sliced just thick enough not to fall through. Pepper slices skin side down, grilled until black. The blackened skin slipped right off when cool. Easy and delicious! Next time I might try adding fennel.

I made this with 2 somewhat large onions, and possibly grilled them too long, and they ended up overwhelming the dish. If I make it again would use one onion and and grill everything so it has less char. More capers and vinegar?

Very good. Cooked this as instructed, on a sheet pan on a charcoal grill. Just let them sizzle under the cover for awhile, turned them, and let them finish. Perfect.

Made this with Japanese eggplant as well - added garlic, extra oil and white wine to make it more like a sauce - served over pasta - IT WAS GREAT ... good enough where I'm going to do a video on it on my cooking channel - thank you

Very nice as a condiment (salad) to grilled chicken. Use whatever herbs you have around.

I slightly altered this recipe and added mushrooms and a few chopped tomatoes and 2 cloves of fresh garlic in addition to the Italian parsley, basis and oregano. I also placed it all under the broiler. The aroma that filled the house was mouthwatering, and the taste was simply divine!!
