Is German Pancake the Same As Dutch Baby?

German pancake is basically the same as Dutch Baby or Dutch Baby Pancake.

The reason why it’s called Dutch baby is because German is Deutsch and the sound is similar to Dutch and it was probably misspelled as Dutch.

Either way, German pancake originated from Seattle, Washington in the first half of 1900, according to Wikipedia.

When I was in Netherlands recently, I certainly didn’t see any restaurants selling Dutch Baby!

Ingredients of German Pancake

It’s amazing what a few ingredients could make magic with intense heat and baking in the oven. The ingredients of the batter are very simple:

  • Eggs
  • All-purpose flour
  • Milk

Additional ingredients can be added to the basic batter, for example: salt, sugar, melted butter and vanilla extract. But at the very core, German pancake calls for only 3 key ingredients above.

It’s quite magical what the batter can do in the oven. You have to make it and see it with your own eyes to believe it!

FAQs

Why are my German pancakes not fluffy? ›

Why Didn't My Dutch Baby Puff Up? Like popovers and Yorkshire pudding, the thing that gives Dutch babies their signature puff is steam. In order for that steam to work the pancake into its signature peaks and valleys, you need two things: enough air in a well-developed batter and a piping-hot pan and oven.

What makes German pancakes rise? ›

The recipe doesn't contain any chemical leavening as the milk and eggs create steam that causes the Dutch Baby to rise. If the pancake was a little flat it is most likely that either the oven or the skillet (or other pan) was not hot enough.

I was still curious about the origins of what I called a “Dutch Baby Pancake.” A bit of sleuthing revealed that the dish is actually of German origin. What makes pancakes fluffy and helps them rise? ›

Pancakes and waffles typically both contain baking soda, which causes them to rise. As soon as the baking soda is combined with the wet ingredients (which contain an acidic ingredient, like often buttermilk), it starts producing carbon dioxide gas bubbles that cause the batter to rise.

Why are my pancakes flat and not fluffy? ›

Why are my pancakes flat and not fluffy? A flat pancake is usually the result of the batter being too wet. This is because there isn't enough strength from the flour to trap the bubbles produced by the baking soda.

German pancakes use a whole lot more eggs and no added leavening agent. German Pancakes are also baked in the oven to a golden perfection. Whereas the traditional American pancake uses baking soda or powder to help it fluff up and is cooked on a hot stovetop or grill and is much fluffier when done.

What is a food called a Dutch baby? ›

Why are my pancakes not fluffy enough? ›

Over-mixing pancake batter develops the gluten that will make the pancakes rubbery and tough. For light, fluffy pancakes, you want to mix just until the batter comes together—it's okay if there are still some lumps of flour. Fat (melted butter) makes the pancakes rich and moist.

Why are my pancakes rubbery not fluffy? ›

If you stir your pancake batter too much, the gas bubbles that your acid and base just produced will be released. Over stirring causes tough, rubbery pancakes. You should barely stir your pancake batter.

Why is my pancake batter so airy? ›

Usually, pancake batter has baking soda or baking powder. Those react to water and heat— first reacting when the batter is mixed, then when the batter is cooked. The leavenings react and form carbon dioxide— the bubbles. The bubbles lift the batter, making it thick and fluffy.
